Your ssh connections for game servers are limited to only accept the sftpserver variant. This is normally "good enough", but for some files it is inefficient.
The primary culprits would be log files, which are appended to and uncompressed level files which will have small random changes in a massive file.
The rsync(1) command is good at transferring these, sometimes giving a considerable reduction in bandwidth, you would need to whitelist commands like below in an "scponly" style shell.
rsync --server --sender -logDtprxe.iLsfxC . /.
NB: rsync over sshfs does not have these efficiency gains.
